Buttermilk Fried Chicken Recipe
One of my favorite chefs, Billy Parisi, has an amazing fried chicken. As my kids told me, “this is the best fried chicken I’ve ever had.” After hearing this, it’s clear that this recipe is a keeper! 🍗🔥

My Notes
- trim down the chicken breast. It was a bit large, and it took a long time to cook.
- added 2 Tbs hot sauce ❤️🔥
- grapeseed oil
- no bacon fat
- Served with collargreens and mash potatos
Brine
- 1 cup water
- 3 tablespoons coarse salt
- 1/2 cup white distilled vinegar
- 1 cup ice
- 6 finely grated cloves of garlic
- 1 quart buttermilk
- 1 tablespoon hot sauce
- 1 whole roasting chicken cut up into parts
For the Breading
- 3 cups all-purpose flour
- 1 cup cornstarch
- 2 tablespoons paprika
- 1 tablespoon coarse salt
- 1/2 tablespoon ground black pepper
Miscellaneous Ingredients
- 4-5 cups oil for frying (Grapeseed oil)
- 1 cup rendered bacon fat for frying
