Instructions
Step 1: Sweat the Aromatics
Heat oil in a saucepan over medium heat.
- Add onion and cook until soft, ~4 minutes.
- Add garlic and cook 30 seconds until fragrant.
Step 2: Build the Sauce
Add chipotles + adobo sauce, ketchup (or tomato sauce), brown sugar, vinegar, molasses (or honey), Worcestershire, cumin, smoked paprika, pepper, and salt.
- Stir to combine.
Step 3: Simmer
Simmer 15–20 minutes, stirring occasionally.
Step 4: Blend
Blend smooth with an immersion or countertop blender — this is important to break down the chipotle chunks for a silky sauce.
Step 5: Finish
Stir in the lime juice off the heat.
- Taste — add another chipotle if you want more burn.
- Sauce thickens as it cools, so pull it a touch thinner than your target.
Notes
- Makes ~2.5 cups.
- Heat scales with the chipotles — 2 is medium, 3+ brings real burn.
- The adobo sauce is where the smoky magic lives — don't skip it.
- Keep refrigerated for 3-4 days or freeze portions for longer storage; this is not a shelf-stable sauce.
- For brisket: serve on the side, or brush on during the last 20–30 minutes. Outstanding on leftover brisket tacos with pickled onions.

Safe Handling
Refrigerate promptly in shallow containers at 40°F or below, within 2 hours of preparation (1 hour above 90°F). Use within 3-4 days. Reheat leftovers to 165°F; bring soups and sauces to a rolling boil when reheating. Thaw frozen portions in the refrigerator, not on the counter.

Blending Caution
For a countertop blender, let hot sauce cool to the temperature allowed by the manufacturer; never seal hot liquid in a personal blender. Blend in small batches with the lid vented as directed. An immersion blender can avoid transferring the hot sauce; keep its blade submerged.
