Ingredients
Substitutions: Ground pork + 1 tbsp chili powder + 1 tsp cumin + ½ tsp paprika + splash of vinegar for the chorizo. Butternut squash cubes for sweet potato. Small flour tortillas for corn.

Toss in a jar, shake, let sit while you cook. Ready by taco time. Refrigerate promptly and use within 3-4 days; these quick onions are not shelf-stable or a canning recipe.
Instructions
- Cook the sweet potato (10 min) — Large skillet, medium-high heat, 2 tbsp olive oil. Add diced sweet potato in a single layer. Season with cumin, smoked paprika, salt. Cook 8-10 min, stirring every 2-3 min, until golden and fork-tender. Remove to a bowl.
- Cook the chorizo (5 min) — Same skillet, no extra oil needed (chorizo has plenty of fat). Squeeze chorizo from casing, break it up with a spoon. Add garlic. Cook for about 4-5 minutes or longer until browned and at least 160°F internally (165°F for poultry chorizo). Drain any excess grease.
- Combine — Toss the sweet potato back into the skillet with the chorizo. Squeeze half a lime over everything, toss gently.
- Warm the tortillas — Directly over a gas flame (15 sec per side) or in a dry skillet until pliable and lightly charred.
- Build the tacos — Spoon chorizo-sweet potato mix into tortillas. Top with crema, cotija, pickled onions, cilantro, avocado, hot sauce if desired, and a squeeze of lime.
Chef's Tips
- Dice the sweet potato small — ½" cubes cook fast and get crispy edges. Bigger chunks take too long for a weeknight.
- Don't stir the sweet potato constantly — let it sit and develop a crust on the bottom before flipping. That caramelization is the whole point.
- Mexican chorizo ≠ Spanish chorizo — you want the raw, loose stuff in the casing (usually near the ground pork), not the cured hard sausage.
- Meal prep move — cook the chorizo & sweet potato filling in bulk. Keeps 4 days in the fridge. Reheat in a skillet, assemble fresh tortillas & toppings.
- Make the pickled onions ahead — a jar in the fridge means instant taco upgrade any night.

Raw pork or beef chorizo and ground-pork substitutions need 160°F; poultry chorizo needs 165°F. Keep raw meat and its utensils separate from ready-to-eat foods; wash hands and clean work surfaces after handling raw meat.
