Ingredients

Substitutions: Turkey sausage for lighter version. Great Northern beans or chickpeas instead of cannellini. Kale or escarole for spinach. Swap broth for bone broth for richer flavor.

Instructions

  1. Brown the sausage (5 min) — Heat olive oil in a large pot or Dutch oven over medium-high. Add sausage, break into crumbles. Cook until browned and at least 160°F internally (165°F for turkey sausage). Remove to a plate if your pot is small, or just push to one side.
  2. Build the base (3 min) — Add onion to the pot (use the sausage fat). Cook 2-3 min until softened. Add garlic, Italian seasoning, and red pepper flakes — cook 30 seconds until fragrant.
  3. Simmer (12 min) — Return any reserved sausage to the pot. Add diced tomatoes, beans, and chicken broth. Drop in a Parmesan rind if you have one. Bring to a boil, reduce to medium-low, simmer 10-12 min. Mash a few beans against the side of the pot to thicken.
  4. Finish with greens (2 min) — Stir in spinach, let it wilt 1-2 min. Remove and discard the Parmesan rind, if used. Season with salt and pepper.
  5. Serve — Ladle into bowls, top with grated Parmesan, serve with crusty bread for dunking.

Chef's Tips

  • Mash some beans — crushing 8-10 beans against the pot gives you a creamy broth without adding cream. Old Italian trick.
  • Parmesan rind — save those rinds in a freezer bag. They're liquid gold in soups and stews.
  • Even better day two — the beans absorb the broth overnight. Add a splash of broth when reheating.
  • Freezes well — 3 months in the freezer. Portion into containers.

Dietary Notes

Parmesan contains milk. Check sausage and broth; ordinary crusty bread contains wheat. Check ingredient labels and cross-contact information for allergies.

Cooking Safety

Pork/beef sausage needs 160°F; turkey sausage needs 165°F. Keep raw meat and its utensils separate from ready-to-eat foods; wash hands and clean work surfaces after handling raw meat.

Refrigerate promptly in shallow containers at 40°F or below, within 2 hours of preparation (1 hour above 90°F). Use within 3-4 days. Reheat leftovers to 165°F; bring soups and sauces to a rolling boil when reheating. Thaw frozen portions in the refrigerator, not on the counter.
