Łazanki (Polish Pasta with Kielbasa & Cabbage)

Pronounced "wah-ZAHN-kee." A rustic Polish comfort dish — smoky kielbasa, golden onions, sautéed cabbage, and tangy sauerkraut tossed with square noodles. Almost no sauce, huge flavor from cheap ingredients, and it's even better as leftovers on day 2-3. Pasta shape and parallel cooking affect the total time.

  1. Bring a pot of salted water to a boil. Cook pasta until just al dente (łazanki squares cook fast, ~4-5 min; bowties ~10 min). Drain and set aside.
  2. Heat oil in a large 12" skillet over medium-high. Add the sliced kielbasa and fry until browned and crisp at the edges, 4-5 min. Remove and set aside.
  3. In the same pan (use the rendered fat), add onions and cook until soft and golden, 6-8 min. (If using mushrooms, add them with the onions and cook until browned.)
  4. Add the shredded cabbage. Cook, stirring, until it softens and lightly browns — it'll cook down to about a third of its volume, ~8-10 min.
  5. Stir in the chopped sauerkraut and heat through, 2 min. Season with salt and pepper.
  6. Return the kielbasa to the pan, add the drained pasta, and toss everything together until hot and well combined. Finish with a pat of butter if you like.
  7. Taste and adjust salt/pepper. Serve hot.

Chef's Tips

  • Can't find łazanki squares? Farfalle (bowties) are the easiest swap and hold the chunky bits well. Egg noodles or hand-cut pappardelle squares also work.
  • Cabbage + sauerkraut together turns the flavor dial all the way up — fresh cabbage for sweetness, kraut for tang. You can use all of one or the other, but both is best.
  • Brown the kielbasa hard — those crispy edges and rendered smoky fat are what flavor the whole dish.
  • Leftovers rule: Keeps 3-4 days in the fridge and tastes even better on day 2. Great cold as a lunchbox pasta salad. Don't freeze.
  • Want it richer? Fry the onions in lard or bacon fat, or add a few strips of chopped bacon with the kielbasa.
  • Serve with extra sauerkraut on the side and some crusty or cheesy bread.

Use a fully cooked kielbasa and check its label. Butter, egg noodles and serving breads change allergen content. Check ingredient labels and cross-contact information for allergies.

Safe Handling

Refrigerate promptly in shallow containers at 40°F or below, within 2 hours of preparation (1 hour above 90°F). Use within 3-4 days. Reheat leftovers to 165°F; bring soups and sauces to a rolling boil when reheating. Thaw frozen portions in the refrigerator, not on the counter.
