Instructions
- Preheat oven to 425°F.
- Season the chicken — Pat thighs dry with paper towels (crucial for crispy skin). Season generously with salt, pepper, oregano, and smoked paprika on both sides.
- Sear the chicken (6 min) — Large oven-safe skillet, medium-high heat, 2 tbsp olive oil. Place thighs skin-side down. Sear 5-6 min until the skin is golden and crispy. Don't move them — let the skin do its thing. Flip once.
- Add the good stuff — Scatter artichoke hearts, olives, capers, garlic, cherry tomatoes (if using), and lemon slices around the chicken. Squeeze lemon juice over everything.
- Roast (18-20 min) — Transfer skillet to oven. Roast until chicken reaches 165°F internal and the skin is deeply golden.
- Finish — Rest 5 min. Garnish with fresh parsley or basil. Serve straight from the skillet.
Chef's Tips
- Dry the skin — this is non-negotiable. Wet skin = no crisp. Pat it dry, then season.
- Don't crowd the pan — if your skillet is small, work in batches or use two pans.
- Serve with: crusty bread to soak up the pan juices, couscous, orzo, or roasted potatoes.
- Reheating: Oven at 350°F until the center reaches 165°F; 10 minutes may not be enough. Skin won't be as crispy but the flavor holds up perfectly.
