Ingredients

Quick Homemade Sauce

Melt the sauce butter (or warm the listed oil alternative, if using) in a saucepan over medium heat. Whisk in the flour, chili powder, cumin and garlic powder. Gradually whisk in the broth and tomato sauce; bring to a simmer and cook for 10 minutes, stirring frequently.

Instructions

  1. Preheat the oven to 375°F. Boil or microwave the diced potato until just fork-tender (~6-8 min), then drain. (Microwave: cover, 4-5 min.)
  2. Heat olive oil in a skillet over medium-high. Sauté onion and garlic until softened, 3-4 min.
  3. Squeeze the soy chorizo out of its casing into the pan and break it up. Cook 5-6 min, letting it crisp and darken — don't stir constantly, you want browned edges.
  4. Fold in the cooked potato (and black beans if using), cumin, and salt. Cook 2 more min so flavors marry. Stir in half the cheese off heat.
  5. Warm corn tortillas so they're pliable — microwave in a damp towel, or a quick 10-second dip in hot oil.
  6. Roll filling into tortillas, line seam-side down in a greased baking dish.
  7. Cover with enchilada sauce and remaining cheese.
  8. Bake at 375°F for 20-25 min until bubbly and golden.
  9. Top with crema, crumbled cotija, cilantro, avocado, pickled jalapeños, and a squeeze of lime.

Chef's Tips

  • Let the chorizo crisp — soy chorizo is wet out of the package. High heat and patience give you those browned, almost-crunchy bits that carry the dish.
  • Potato sizing matters — dice small (½") so it cooks fast and rolls easily.
  • Soyrizo brands: Trader Joe's Soy Chorizo and Cacique Soyrizo are both excellent and widely available. El Burrito Soyrizo is the classic.
  • Vegan swap: use oil instead of butter in the sauce and dairy-free shredded cheese; skip cotija or queso fresco, and use dairy-free crema or omit crema.
  • Meal prep: The chorizo-potato filling keeps 4 days in the fridge and is a killer breakfast taco / burrito filling with a fried egg. Assemble the full dish ahead, cover with foil, and bake next day — allow at least 5-10 extra minutes and confirm the center reaches 165°F.

Dietary Notes

For a vegan version use oil, dairy-free cheese and dairy-free crema or omit crema, and skip cotija/queso fresco. Check soy chorizo, tortillas and purchased sauce. Check ingredient labels and cross-contact information for allergies.

Refrigerate promptly in shallow containers at 40°F or below, within 2 hours of preparation (1 hour above 90°F). Use within 4 days. Reheat leftovers to 165°F; bring soups and sauces to a rolling boil when reheating. Thaw frozen portions in the refrigerator, not on the counter.
