East Texas–style BBQ sauce — sweet, sticky, and smoky with a deep, oaky backbone from the whiskey. Simmering blends the whiskey with the molasses and brown sugar; the sauce retains an alcohol-containing ingredient. A crowd-pleasing sauce that's perfect slathered on brisket.

Instructions

Step 1: Sweat the Aromatics

Melt the butter or warm the oil in a saucepan over medium heat.

  • Add onion and cook ~4 minutes until soft and translucent.
  • Add garlic and cook 30 seconds until fragrant.

Step 2: Deglaze with Whiskey

Pull the pan off the heat and add the whiskey (it can flare if added over an open flame).

  • Return to heat and simmer 2–3 minutes to mellow the flavor; this does not make the sauce alcohol-free.

Step 3: Build the Sauce

Add ketchup, brown sugar, vinegar, molasses, Worcestershire, Dijon, smoked paprika, pepper, and salt.

  • Stir to combine.

Step 4: Simmer

Simmer 15–20 minutes, stirring occasionally, until thickened.

  • For a silky-smooth sauce, blend with an immersion or countertop blender.

Step 5: Finish

Taste and adjust — more brown sugar for sweet, more vinegar for tang.

  • Sauce thickens as it cools, so pull it a touch thinner than your target.

Notes

  • Makes ~2.5 cups.
  • Keep refrigerated for 3-4 days or freeze portions for longer storage; this is not a shelf-stable sauce.
  • Pairs beautifully as a contrast to a spicier sauce like the 🌶️ Chipotle BBQ Sauce.
  • For brisket: serve on the side or brush on during the last 20–30 minutes of cooking / resting.

Heat: Mild.

Dietary Notes

Standard Worcestershire often contains fish. Butter adds dairy; use oil if avoiding dairy. Whiskey remains an alcoholic ingredient after simmering. Check ingredient labels and cross-contact information for allergies.

Safe Handling

Refrigerate promptly in shallow containers at 40°F or below, within 2 hours of preparation (1 hour above 90°F). Use within 3-4 days. Reheat leftovers to 165°F; bring soups and sauces to a rolling boil when reheating. Thaw frozen portions in the refrigerator, not on the counter.

Blending Caution

For a countertop blender, let hot sauce cool to the temperature allowed by the manufacturer; never seal hot liquid in a personal blender. Blend in small batches with the lid vented as directed. An immersion blender can avoid transferring the hot sauce; keep its blade submerged.
